Best Zucchini Recipe
Since I started eating vegetarian I have made an effort to try new dishes and explore new ways of cooking. Zucchini is not a vegetable that I normally eat or even cook. I love Zucchini bread but being on a gluten free diet, it would require some research to the make bread. For me, quick and easy meals are the way to go because I'm always on the go. Over the years I have found ways of cooking my favorite dishes in the shortest amount of time.
I love this Zucchini dish because it's easy to cook and doesn't require any complicated ingredients.
The ingredients you will need are as follows:
- One Zucchini
- One Red Onion
- One clove of Garlic
- Ginger
- Rosemary
- Cilantro
- Thyme
- Rice Vinegar
- Coconut Oil
All of the vegetables in this dish are fresh, you may use dry herbs if you would like.
I first start by chopping the onion into long pieces and place it in a pan to sauté for about five minutes. I used coconut oil in this recipe but you can also use olive oil. I like coconut oil for the flavor.
After the onions are at a good texture add the zucchini. An easy to cut zucchini is to use a cheese grater. By doing this you save time and the slices are consistent.
Next I mince garlic and ginger. you can also use a cheese grater to get a finer cut for the garlic and ginger. Add the garlic and ginger to the dish and let it cook for another five minutes.
To flavor I add rice vinegar. To measure, I pour it into the cap then onto the pan. You may also add salt if desired.
I love to use herbs in my dishes so I decided to go with rosemary and thyme. I minced both of them then added them to the pan.
To determine if the Zucchini is cooked I usually look at the texture or the color of the zucchini. Zucchini usually gets soft when it is cooked and you do not want to over-cook it. After it is cooked I placed it in the freezer for ten minutes. I like it cold because it serves as a salad rather than a main dish.
After it has cooled, I chop Cilantro and add it for a fresh finish.
